A grill smoker box is a device used to add smoky flavor to food cooked on a gas or charcoal grill. You use a Cast Iron Smoker Box or a Stainless Steel Smoker Box. Cast iron holds the heat well and makes for easy cleanup. Just fill it full of charcoal or your favorite brand of wood chips (mesquite is a popular one with strong flavor. Cherry wood is not as strong and has a more subtle flavor.
To use the smoker box:
1. Soak your wood chips in water for around 20 - 30 minutes. or else they are likely to light on fire and give you more flame than smoke.
2. Place the smoker box on the cooking grates and fill it with the wood chips (let the excess water drain off). Close the lid of the smoker box, and the lid of the grill, and in about 20 minutes the chips should have started to smolder and will begin adding smoky flavor to your food.
3. If all the chips burn out, but you still want to add more smoky flavor, just flip open the lid and toss in some more wood chips.
Keep in mind that most of the smoke will accumulate around the smoker box. The closer your food is to the smoker box, the more smoke flavor it will absorb.
You can basically do the same thing with an aluminum foil bag of wood chips (or charcoal) and cut air circulation slits in the aluminum foil. It will still give you the smell of smoky barbecue. We don't recommend this option because it is not that healthy.
Go with the smoker box.
It’s the next best thing to having a dedicated smoker.
